. We are all descendents of Noah's three sons, and their wives. So why would they change their language, and how did they change the way they look?

To answer the question about language. according to the Bible, after the flood God wanted the people to spread and repopulate the earth. The people kind of liked where they were living and decided not to leave. That’s where the story of the tower of Babel comes in. the people decided to build a great tower that would reach the sky and prove how great they were. Well God got fed up with this and took action to force them to spread. He changed there languages so that many could not speak to each other. Naturally the people that could communicate grouped together. Eventually it caused them to spread.

As for the issue of skin tone. Though I don’t believe that random mutation can bring new genetic material that will change a species and make it stronger, I do believe in natural selection. Darwin brought forth the concept that through natural selection the stronger and more adapted a life form was to its environment the more likely it would be to survive and reproduce. If you apply that to the subject of skin tone you get an easy answer. As people spread over the planet they went into many different climates. Those that were better genetically equipped for a certain climate would be more prosperous, stronger and have more offspring. For the most part we get our vitamin D from exposure to the sun. The farther north the people moved the less sun exposure they had. Those with a lighter skin tone could more easily absorb the sun. This would give them an advantage in the northern climates.

There are several different genes that relate to color. Adam and Eve would have had all the capabilities within them, except maybe albino. The loss of information is called micro evolution, Macro is the gain of info. So whites may actually be the genetic deformity, where info was dropped. (like blood types A,B are available and O is loss of A or B). By the time Noah came along neither he nor his sons would have all the info for all the colors, fat characteristics, facial shapes, hair color, etc. But the sons each brought wives, and they could have been from the other lines. When they had children Shem's kids might look quite different from Ham's and from Japheth's. The Bible traces each of these familes for several generations. At first they settled all together and decided to build a tower up to heaven so that they wouldn't be scattered (against God's command to spread out) God confused their language (this is where we get the different languages), and they were spread out. each family only took the genes they had, and as they reproduced certain characteristics became dominate in each group. That explains why some groups have some features, and others have others. If the Gene pool were mixed up completely again and then they separated along other lines, other features might go together. (like protruding lips, white skin and mongoloid eyes, or yellow skin, wide eyes, and blonde hair.
edit******You have to see that in order for a people to come out of a male and a female, siblings MUST procreate at first. There is no way around this. There was nothing wrong with this. It was the only way it could happen (even if you are an evolutionist you would have to agree, or all those changes would just be negated). Cain, Abel, Seth, and their other brothers mostly would have married their sisters. Since Seth came along a little later maybe he married a niece. It was not considered a sin. It wasn't gross. It was life, the only choice. God had made woman for man and man for woman..By the time the law was written, the effects of the Fall had begun to catch up with the genetic code, and genetic problems were starting to crop up. At this point, the idea that marrying your sister was wrong came into being. Even Abraham married his half-sister (before the law). The law against incest protected them against inbreeding problems. Several thousand years later we have expanded it to be taboo to marry a cousin or even a second cousin.

According to the Bible, all people today descended from the survivors of a great Flood - Noah's family, who in turn descentded from Adam and Eve (Gen 1:11). There are many stories, from many parts of the world, of a great Flood that only several people survived to repopulate the earth.
But today we have many different groups, often called "races" with what seem to be greatly differing features. The most obvious of these is skin color. Some see this as a reason to doubt the Bible's record of history. They believe that the various groups could have arisen only by evolving separately over tens of thousands of years. However, this does not follow from the evidence.
The Bible tells us how the population that descended from Noah's family had one language and were living together and disobeying God's command to "fill the earth" (Gen 9:1, 11:4). God confused their language, causing a break-up of the population into smaller groups, which scattered over the earth (Gen. 11:8-9). Modern genetics shows how, following such a break-up of a population, variations in skin color, for example, can develop in only a few generations. And there is good evidence to show that the various groups of people we have today have NOT been separated for huge periods of time.
One could say there is really only one race - the human race. The Bible teaches us that God has "made from one blood all nations of men" (Acts 17:26. Scripture distinguishes people by tribal or national groupings, not by skin color or physical features. Clearly, though, there are groups of people who have certain features (e.g.skin color) in common, which distinguish them from other groups. We prefer to call these "people groups" rather than "races," to avoid the evolutionary and racist connotations that have become associated with the word "race."
All peoples can intermarry and produce fertile offspring. This shows that the biological differences between the "races" are not great. In fact, the DNA differences are trivial. The DNA of any two people in the world would typically differ by just 0.2%. Of this, only 6% can be linked to racial categories; the rest is "withinrace" variation.
This genetic unity means, for instance, that white Americans, although ostensibly far removed from black Americans in phenotype, can sometimes be better tissue matches for them than other black Americans.

As for their language, we'll we've seen language changes even among the races. People invent languages. The New Testament was written in a language that was created by Alexander the Great, for example. The Phoenician language aided the creation of ancient Greek, ancient Greek, Greek influenced Latin, Latin influenced all the European languages including Old English, Old English influenced modern English, modern English. Nations change languages for numerous reasons. As for physical features, our skin tone and features reflect our heritage. Our color changes according our parent's color and where we settle. For instance my mom's side of the family is Native American, my dad's side is European in ancestry, so I am a mix of the two, and depending on where my future wife is from, our children would resemble their heritage. Its very common sense. Noah lived THOUSANDS of years ago, and I don't even look like my dad. How can you expect everyone, then, to bear a resemblance to Noah? Heck even my blood type is different than my dad. Our features change drastically from generation to generation, unless of course we have relations with people of the exact same skin tone and heritage. Thats why Asians all look very similar, but if an Asian and a European have children, then the child may look different than either group. Its just nature.

There are three races: Black, White, and Mongolian (Asian). Every other color in between is a mixture of any of these three. The terms Egyptian, Mexican, Chinese, etc are not races, but nationalities or ethnicities. Race is defined by what you can tell about a person just by glancing at them and it is determined by where one's ancient ancestors lived. Asians have hooded eyes because back in the day they lived in snowy cold climates and their eyelids adapted by becoming thicker to protect their eyes from the freezing winds. Black are generelly tall and thin with very curly hair because their ancestors are from very hot places and their hair became curly to protect their sensitive scalps from the sun and their bodies were tall to avoid sun exposure. Does that make sense?

If you take this literally then you end up with incest and all that fun stuff and then humanity should of died long ago. But if you take this contextually then you see maybe the writer is explaining what happened to a certain region not the entire world or maybe it's completely symbolic. If you take it the way you are bringing it about then you make it like nothing in this world can be taken in an abstract manner.
