Well, of course how would Noah even get a penguin? Penguins aren't native to the area. He wouldn't even know what one is.

Some penguins stay in the water for as long as 5 months, swimming thousands of miles. They can even sleep in the water. They come ashore to breed, moult and grow new feathers. Easy for them to survive Noah's flood! Not a problem!

They were warm water penguins in those days. It wasn't until modern times that they needed ice.

Penguins can swim and i'm pretty sure there was still ice were they lived.

Ice floats so when the fload came the little guys just stayed where they where and went fishing for food like usual.
