My husband is working a 4pm to 12pm shift, and then goes to college from 10am to about 2pm everyday... so lately he has been eating cup of noodles.. fast food.. whatever he can, in the short amount of time he has everyday. I cook nutritious meals when he is home and we are all together as a family.. but I am running out of ideas of meals to send with him to work.
Other than sandwiches/wraps... what are some quick and inexpensive meal ideas that I can make and send with him? Like pasta dishes, salads, things like that?

I have a very rough work schedule which keeps me on the road VERY often.

I LOVE fresh cut fruit (now a days found pre-cut at most grocery stores) with plain yougurt and honey. Believe it or not, these are WONDERFUL lunches for me when I'm on the road. Accompanied with tea or juice and its just filling. Also very quick.

You could also do some caesar salads. Romaine lettuce cut up into 1/2 pieces... Take some chicken and grill it with light jerk spices. Slice those up into bite sized pieces. Add some croutons. (also pre sold or you can just make your own in your oven or toaster.) Depending on how long he has to wait to eat, you could put the dressing on or on the side. :) Very quick and very nutritious!!

Saute some shrimp in butter and garlic. Boil some bow-tie noodles (or egg noodles are good too!) Make a reduction of butter and garlic. Add some shallots. When its heated through, mix in the shrimp, toss with the noodles. Usually reheats well!! (especially if you undercook the shrimp so that when they reheat they are at perfect done-ness.) You can top with diced Roma Tomatoes, too.

Lasagna is a good one that reheats well. I make a mean 3 meat lasagna with Spinach and, 5 types of cheeses and 3 types of mushrooms... it keeps for over a week and is REALLY good cold and reheated!!

I also love a good trail-mix. I go to the healthfood store or a nice grocery store. They have lots of dried nuts and fruits and you can mix your own! I like walnuts and brazil nuts and I love cranberries and strawberries and raisins, etc. So I'll mix my own trail mix. Make sure you get the unsalted nuts, though! Again, with yogurt, its great. Also I try to keep a bag with me in the airport or in the car - they just make great munchies!! Add granola and/or pour over cereal and its a great addition to grape nuts or cheerios! :)

Salads. I use fresh baby spinach because it won't go brown like lettuce. Wrap tuna or chicken meat in a plastic wrap. Throw in nuts, crumbled cheese, etc.
I make wraps from pita bread.
Even peanut butter and jelly with cream cheese is a change.
sticks of zucini and cottage cheese.

cook boneless skinless chicken breasts in microwave till they are almost done dice and mix it with cooked broccli and egg noodles then put alfredo sauce on it ragu makes a pretty good one then sprinkle it with parmesan and bake for a little bit till chicken is done then pull it out and sprinkle with mozerella! my family loves it and it can also be thrown in a crock pot reheats rather well!!! happy hunting
