Thanks everybody.
Anyone who knows me, knows that I LOVE my cuppa.
I call it "Comfort in a Cup".
I'm not fond of herbal tea though.

Don't boil the tea on the stove like most people do. Seep it drop the tea bags into the water after it is done boiling and strain it after a few minutes. Repeat it if necessary. It makes for a much less bitter pot or cup of tea.

Anyone for indian masala chai?


1 ½ cups water

2/3rd cup whole milk

6 tsp. sugar (or to taste)

3 teaspoons any un-perfumed loose black tea or

4 single tea bags (Lipton)

1/4th teaspoon Masala Tea mixture

OR

A 2" piece of fresh ginger
A pinch of Cardamom powder

Put 1-1/2 cups water in saucepan and bring to a boil. Add the masala tea spice mixture. Let it boil for a minute. Add the milk and sugar and bring to a simmer again. You may avoid adding the sugar and add a sweetener in the end while serving. Throw in the tea leaves or bags. The tea mixture will rise and many spill over the top, so be aware and remove from the heat (electric stove) or turn off the heat (gas stove). Let it sit for 2 minutes. Strain the tea into two cups and serve immediately. Sip and enjoy!

Fresh tea. Always use fresh, cold water. Bring it to a boil. Pour the boiling water over the tea (either a bag, or better yet, loose tea in an infuser or tea ball). Let the tea steep for 3-5 minutes (depending on the type of tea and the strength desired). Take the tea bag (infuser, ball) out. Do not squeeze, shake, dip. Add milk/cream and honey/sugar to taste. (Milk or cream is not recommended with herbal teas, but that's a taste thing).

I think its letting it get just strong enough so it has a nice, light, flavor but not letting it get so strong it gets kind of "thick-seeming".

Using spring water is best, and making sure the water gets good and hot (not just reaching boiling point but a while longer) also makes a difference.

Add two sugars or else a lump of honey.

also warm your teapot with hot water before pouring boiling water in it....your tea will stayhot longer
