Vegetarian Chili
1 large onion, chopped
1 green pepper, seeded and chopped
1 teaspoon cumin
1 teaspoon dry mustard
1 teaspoon dry ginger
1 teaspoon oregano
chopped garlic, to taste
1/2 teaspoon cayenne pepper
6 ripe tomatoes, chopped (or 1 large can crushed tomatoes)
1 lb meat substitute (1 package tofu italian sausage and 8oz seitan marinated in BBQ sauce for example)
3/4 cup ketchup
1/2 cup blackstrap molasses
1/4 cup soy sauce
juice of 1 lemon
2 tablespoons tabasco sauce
Heat olive oil in a heavy stew pot. Throw in the onion and green
pepper, then add all of the spices and garlic, and mix thoroughly.
Let simmer until onions are translucent. Add a little more oil if
necessary, and be careful not to burn the spices. Add the tofu
sausage and/or Seitan and let simmer until the sausage and Seitan are gently braised. Add the beans and tomatoes and mix thoroughly.mix the ketchup, molasses, tabasco, soy sauce, and lemon in a bowl. Adjust the amounts to your taste, and add to the chili pot. Let the chili simmer over low heat for 30 minutes to 1 hour. You can always serve it sooner, but the flavors improve with time.

It's a wordy semi-complicated process to make your own at home. Rather than me filling this answer with several thousand words I'd highly recommend the cookbook "The new Farm Vegetarian Cookbook" that is easily available on-line from Amazon or Abe-books and can even be obtained by your local library! I've been making my own since the early '70s since it was almost impossible to buy ready-made ones back then!

Vege Meat Loaf
3 egg whites, beaten
1 C fatfree cottage cheese
1C rolled oats
1tsp sage or parsley
1 finely chopped onion
1T soy sauce
1t marmite or vegemite (yeast extract spread...i think it is a kiwi thing, so
if you can't get it try some kind of stock)
Mix all ingred together and put in greased loaf tin. Bake approx 45 mins in
moderate oven till firm and brown.
Eat hot or cold.

my dad used to make a wheat loaf out of wheat germ (very good)!its something like oatmeal but its wheat Im trying to find the recipe for u. My dads not here right now for me to ask him so maybe u can get in touch with another time or go to www.foodnetwork.com thay may have or may not he had gooten the recipe years........ago out f a vegertarian cookbook I haven't seen the book around he eats chicken and fish now.( Use wheat germ not rolled oats)
