Besides all of the green veggies everyone mentioned, you could put some green food coloring in the batter to make a green cake or .cupcakes. Green jello. My mom used to make a green punch for St Patrick's day. Here is the recipe:

St Patrick's Punch

INGREDIENTS
2 (3 ounce) packages lime flavored gelatin mix
1 quart hot water
1 (46 fluid ounce) can pineapple juice
2 (12 fluid ounce) cans frozen orange juice concentrate, thawed
2 cups white sugar
4 1/2 cups cold water
2 liters ginger ale
DIRECTIONS
In a large saucepan dissolve the gelatin in 1 quart of hot water. Allow to cool.
When gelatin is cool, pour into a large punch bowl, Stir in pineapple juice, orange juice concentrate, sugar and 4 1/2 cups cold water. Pour in ginger ale just before serving

If you want to make it really strange, add 2 cups of lime sherbet to the punch bowl before you add the juices. I makes the punch kind of foamy.
Good luck!

I will give you a green idea. Place in the middle of pate, a dip. Recipe below. Surround the bowl of dip with green peppers, a few long green onions, green olives (yuck), pickled green beans, fresh green beans, and if I were you I would add some red. herry tomatoes or red peppers.

Dip: Mayonaise, sour cream, chives, chopped onion, parmeson, jalapeno peppers, and a teaspoon of salt.

Have fun.

Some of these will be very familiar to Westerners:

Broccoli, green beans, peas of various types, spinach, lettuce (entertain you) for a party is just fine with the right dressing!

Brussel sprouts are fine with red meats, red wine, or beer.

There are some more warm-climate & tropical choices: avocado, hot pepper, and poi (from Hawaii).
