Mushrooms are great! There is a wide variety and you can buy them; fresh, canned and dried. The typical white or button is the most common but not that much flavor. It's good in salads and on burgers or a steak. Porcines are little portabellas both are heartier than whites and very delicious. Portabellas are also large enough to stuff with cheese or sausage etc. There are brown, oyster, inoki too. Don't wash mushrooms, they will soak up the water and lose their flavor. Brush them off with a paper towel or buy a mushroom brush. Try different mushrooms. Saute them in butter or olive oil. You might want to add a little salt and pepper or some parsley or oregano. Go easy on the spices though or you won't be able to taste the mushrooms. Try this easy recipe for a delicious treat. Use one portabella for each person. Remove the stems from mushrooms, set mushroom caps aside. Dice the stems. In a bowl mix the stems with a pinch of salt and pepper, one egg (for every 4 mushrooms), 1/2 cup of bread crumbs. Stir to combine then stuff the underside of the caps with the mixture. Place caps on cookie sheet lightly covered with olive oil. Sprinkle the top of each mushroom with Parmesan cheese and bake at 350-400 degrees until cheese melts and mushrooms are softened. About 10-20 minutes.
You can spice this recipe up by adding a little garlic and Italian spices or add some cooked sausage to the stem mixture before stuffing the caps. hope this helps!

I like a good mushroom burger or sauteed & put over broiled pork steaks, even in a dinner salad.

I like the regular plain you get in produce or the button you get in can. They have a lot of other varieties but I'm satisfied with the regular fare. I love them in my eggs or just plain fried in butter and/or olive oil. Also love them in turkey gravy. They are a good source of selinium.
