I froze 2 packages of ground sirloin, the same size & weight, same dates & from the same store, & both bought on the same day (about 2 weeks ago) today I pulled them out to get ready to make spaghetti. One was still bright red & the other looks brown. No puncture holes that maybe caused air to get in. What happened? Is the brownish one ok? I didn't freeze them right away. Maybe about 2 days later cuz I couldn't get to using them.

Do you have a frost free freezer? How were they put in the freezer, side by side or one on top of the other? How close to the vent in the freezer were they?
Frost free freezers can do strange things to things and can absolutley ruin ice cream.
How does the brown one smell? If it is bad, you will almost instinctively kknow it is bad by the smell.
Brown is one thing, if it has a greenish brown tint, it is definitely bad.

They are both probably fine. When you get ground beef home and break it all apart, you get brown and red, just depending which part hit the air and also the natural aging process of the meat. Two days waiting is fine to refrigerate meat, then to freeze it, as long as it wasn't past the expiration date. Enjoy your spaghetti.

The brown package probably wasn't wrapped tight enough. As long as the meat is still pink on inside it will be ok. When the meat has a sour smell to it it is spoiled .

the meat dept puts ice in the hamburger so it will stay pink it should be ok thaw it out and smell it! i freeze my meat still in wrapper but i put in a store plastic bag that way it won'tget freeze burn if the package is facing down touching bottom sometimes that will make it darken and it makes the blood run through it

Smelled like an anteseptic? Very weird. Sounds like something might have spilled on it. I would not risk eating it.

Just cook them and eat them. If you don't get sick then nothing is wrong. If you get sick it'll pass in a few hours. But don't forget to say grace!

One was probably wrapped a little better than the other.

THEY ARE BOTH EQUALLY GOOD, OFTEN WHEN YOU BUY HAMBURGER IF YOU BREAK IT OPEN SOME IS BROWNISH AND SOME REDISH.- - YOU MIGHT ASK A BUTCHER AS TO WHY.
