This is an EXCELLENT recipe - you can modify it to suit your own taste. ENJOY!!!
Classic Spinach Lasagna
4-6 servings 1¼ hours 20 min prep
Change to: servings US Metric
1 lb medium firm tofu
1/4 cup soy milk
1 teaspoon dried oregano
3 teaspoons dried basil
1 teaspoon salt
2 tablespoons lemon juice
4 cloves garlic, minced
1 small onion, chopped
2 cups spinach, chopped
4-6 cups tomato sauce
cooked lasagna noodles
2 cups soy cheese, for topping (optional)
Preheat oven to 350 degrees F.
In a blender or food processor, blend the tofu, milk, oregano, basil, salt, lemon juice, garlic, and onions together until it achieves the consistency of cottage cheese.
If the mixture is too thick, add a little water.
Stir in the chopped spinach and set aside.
Cover the bottom of lasagna pan with a thin layer of tomato sauce, then a layer of noodles.
Sprinkle half of the tofu mixture and 1/2 cup of the optional cheese.
Cover this with noodles and a layer of sauce.
Add the remaining filling, 1/2 cup of cheese, and a layer of sauce.
Add one more layer of noodles, and cover with sauce.
Top with remaining cheese.
Bake for 30-45 minutes.
Remove from oven and let sit 10 minutes before serving.

layer the noodles with this mixture
ina large bowl mix
spinach grated, romano tomatoes (can), shredded carrots, RED onions diced, broccoli grated, garlic cloves diced, salt and peper, 2 tbs cerole seasoning. Add all this as you please use the romano tomatoes in the can to add the sauce effect.
Layer the FIRST bottom of the pan layer with ONLY pasta and cream of celery
Middle layers get the mixture i mention above in the bowl
when you get to the TOP of the lasanga layer top with ONLY broccoli and cream of celery.
the cream of celery will give a cheese substitute
it takes great. teh broccoli really compliements to the top layer using the campbell cream of celery.
cook it 350 for about 45 minutes

You could put anything between the noodles. I would recommend maybe eggplant and zucchini (or any other veggies you like). Of, if you vegan and that's why you don't want the meat and cheese, try a little tofu cheese. It won't really stay together without something kinda gluing it together.

Yes I do.
You could look up recipes that are vegan vegetarian... they have tofu in it.
Or...
You could take your favourite regular lasagna recipe and substitute the meat for veggie ground round (looks like ground meat) and use soy cheese instead of the milk cheese.

QUICK VEGETARIAN LASAGNA
Low in fat, cholesterol and sodium.
9 whole wheat & spinach or plain lasagna noodles
1 (16 oz.) skim milk Ricotta cheese
2 egg whites
1 (10 oz.) frozen chopped spinach, defrosted & squeezed dry
2 tbsp. chopped fresh parsley
1 clove garlic, minced
32 oz. jar salt-free, meatless spaghetti sauce
2 to 3 sm. zucchini, sliced 1/8" thick
1 lb. shredded skim milk Mozzarella
Prepare noodles; drain. Blend Ricotta, egg whites, spinach and parsley. Add garlic to spaghetti sauce. Spray 9x13 inch pan with non-stick spray. Spoon a layer of sauce into pan. Cover with 3 noodles and top with sauce again. Cover with 1/2 of Ricotta cheese mixture. Cover with layer of zucchini. Sprinkle with 1/3 of Mozzarella. Cover with 3 more noodles and repeat sauce, Ricotta, zucchini and Mozzarella. Top with noodles, sauce and Mozzarella. Bake at 400 degrees for 30-40 minutes.
