No difference.Caviar is fish roe.
I would guess that "caviar" is probably the French word for fish roe.

The best Caviar comes from Sturgeon. But there are also lesser caviars, from salmon, whitefish, carp etc. Generally Caviar has salt added.
The best way to eat Caviar is on Toast Points with butter and squeeze a little lemon on top, especially if it too fishy for you. I love to pop the tiny eggs between my teeth.
Caviar aficionados generally eat Caviar with just a rectangular cracker. I prefer the Toast Points. You can get very inexpensive Caviar sometimes at Cost Plus. The black, red, or golden(my fav).

Of course Caviar is basically just fish roe or fish eggs if you prefer.

Caviar is fish roe; both terms refer to the eggs harvested from fish. However, the term "caviar" is reserved for only fish roe harvested from Beluga, Osetra, or Sevruga sturgeon.
