I'm planning on having a fondue dinner tomorrow night. It's my first time eating this at home. I am having beef and chicken fondue as well as cheese fondue. For my beef and chicken is it better to have oil in my pot or some type of vegetable broth? And what type of oil is best? Thank you.

--First and foremost, have a separate fondue pot for the chicken and/or beef. Chicken is touchy to cook and if not cooked properly can give you a tummy ache. You want to keep the chicken refrigerated until the last minute--beef is more flexible.
--We prefer to use oil when cooking for fondue. Use canola oil.
--Having written above. Broth works well, as well. If I had to decide which one to do in a broth, I'd say the chicken in a broth and beef in the oil would be my choice. Chicken can get dry and stringy in the oil if overcooked. Beef can handle it.
You are being very ambitious to have all 3 of these fondues. Normally only one of these is served at one dinnner. But go for it. Remember to heat your oil/broth/cheese on your regular stove, first and then light the burners on the fondues and as you get everyone to sit down, bring the pots to the table.
Make it easy on you, enjoy. A big salad, french warm bread or rolls and/or baked potatoes go well with it all. Several steak/dipping sauces (teriyaki, A1, garlic butter, bbq sauce, honey mustard,etc...) go well - and you can get your favorite store ones -- thus giving you time to ENJOY your dinner.

We do meat fondues at least once/year. Use oil. We usually use corn oil -- I've never tried peanut oil, but I think I will next time. To add variety, we also buy some of those mini pizza rolls and egg rolls and fondue those too.

For taste, I highly recommend oil... PEANUT OIL. This is best because it can get very hot without burning (and smoking). Some people prefer broth for health reasons, but remember broth evaporates, creating a need to continually fill it throughout the process. Have fun!

it is better to use oil any oil will work but i find that peanut works the best......make sure your oil is at a temp of about 375 ......to fry the beef and chix.......
