So about 2 years ago I found a recipe for my class project on how to make pancakes. This recipe included only egg whites and not the yolks. And I've searched answers on here with recipes including both egg whites and yolks. Do any of you know what difference it makes if i continue making pancakes with or without egg yolks?

you will continue to have light pancakes. The yolks help to hold thing together but without them will make no difference.

The yolks add richness and help hold the batter together. They also add color and lend a smoothness to the batter.

Here is a recipe I've used that calls for separating the eggs, whipping the whites... maybe you could just leave out the yolks if you are opposed to them but otherwise follow this recipe. HTH

Fluffy & Light Pancakes

2¼ cups Self-Rising Flour
¼ c melted butter or margarine
2 tsp. sugar
2 cups milk
2 eggs, separated

Combine Flour, margarine, sugar, milk, and egg yolks. Beat egg whites until stiff. FOLD egg whites into batter. Cook on greased griddle.

You should try it without egg yolks one time and see if it makes a difference.

If you whant non crappy pancakes no, the eggs are what cook and create a semi solid form to keep the pancake together...and chia and flaxseed in panckes?! eww! i'm not sure how people can stand being vegan, I don't see how it possible, you would have to exclude milk too woulden't you? anyway, thts not the point, you could try piklets, they are thicker and may be able to stand to cook without a binding agent, scene as there is only one egg in most piklett recipies :)

Use "Egg beaters" or an egg substitute.

well you can buy the kind that you just add water to. it still tastes the same and they're still yummy and delicious!
