If you LIKE spinach, try getting whole leaf frozen spinach and saute it over medium heat with a dash of lemon juice.

If you're trying to get a spinach hater to eat it (like I have to do) try Twice Baked Potatoes with Spinach:
Pierce the skin of 4 large potatoes and bake them at 350 for 45 mins or an hour.
Remove from oven and allow to cool until you can handle them.
Cut them in half lengthwise and scoop out the "meat" leaving the shells of skin with about 1/4 inch of meat in them. Put the shells on a baking sheet.
Mash the potatoes with 1/4cup milk, 1/4cup butter, 1/2cup sour cream, about 1/2 cup finely chopped spinach (if frozen or canned, thaw/drain it first; if fresh there's no need), 1cup shredded cheddar cheese, salt to taste and a hefty pinch of powdered cayenne pepper.
Spoon filling back into shells and top with a little more cheese.

Bake at 350 for 30 minutes or until it's all hot and the cheese is golden.

They'll see green flecks but never taste the spinach!

Remove stems and tough veins from spinach, rinse and drain well. Pat dry. Melt 2 Tbsp butter in a frying pan, add 1/4 cup minced onion and 1 clove minced garlic. Saute until clear. Add spinach cook until wilted and tender. Add some cooked bacon crumbles if you wish.

Savory Spinach Yogurt Soup

2 onions, finely chopped
4 tablespoons sweet butter
4 tablespoons flour
4 cups chicken broth
1 package frozen chopped spinach, cooked in microwave
1 cup plain yogurt
Salt, pepper, and nutmeg to taste

Saute onions in butter. Add flour and stir to form a paste. Slowly add chicken stock, and stir until thickened. Add cooked spinach; do not drain. Put mixture into food processor in several batches and blend. Return to pot, whisk in yogurt, and season with salt, pepper, and nutmeg. It is equally delicious when eat warm or chilled

I agree...spinach salad with ranch dressing is good, but also I add a tablespoon of grated parmesean cheese and that makes all the difference! put in whatever vegetable or meat you want too. another way I like spinach is kinda weird but you wash and dry the leaves, spread on a little peanut butter and roll them up. they are crunchy and good that way..little spinach pb wraps! like 4 or 5 will make you full. have fun trying out recipes!:)

I like to sautee some onions and garlic in olive oil. When they are softened I add fresh cleaned spinach and toss until it's just wilted.

Then I add a few TB of cream cheese and some parmesean.

Rigatoni with Bacon, Spinach and Two Cheeses

8 slices bacon, cut in one inch pieces
1 large red bell pepper, cut into matchsticks
1 cup chopped onions
12 ounces rigatoni pasta
1 1/3 cups grated Fontina cheese
1 1/3 cups crumbled gorgonzola
6 tablespoons butter, cut into pieces,room temperature
8 ounces chopped fresh spinach
3 tablespoons brandy
1/3 cup toasted walnuts, chopped
2 tablespoons chopped fresh chives or green onion tops


Cook bacon in a heavy, large skillet over medium heat until crisp.
Transfer bacon to paper towels and drain.
Pour off all but 3 Tbsp.
drippings from the pan.
Add bell pepper and onion to the skillet and sauté until tender.
Remove skillet from heat.
Meanwhile, cook rigatoni in a large pot of salted boiling water until tender but firm.
Drain and immediately return pasta to the same pot.
Add the cheeses and butter until they melt and coat the pasta.
Add spinach and brandy and toss over medium heat until the spinach wilts.
Gently mix in the red bell pepper mixture and the bacon.
Season to taste with salt and pepper.
Garnish with walnuts and chives and serve immediately.

I like fresh spinach salad. I use the spinach from the bag. I put in dried cranberries, sunflower seeds, sliced carrots, and use a good vidalia onion dressing or a fresh vinaigrette dressing, and it is delicious!

Spanikopita, or Greek Spinach Pie. Available every Friday at the Greek diner near my office. Can't deal with phyllo dough myself, so I'm there every Friday. Yum!

Most boil the heck out of it, but I prefer to saute it. You can use a bit of healthy oil, or olive oil, and just toss in the leaves with some garlic. Also you can use it raw in a salad (without E. Coli naturally). The most unique way I have had it is FLASH FRIED. Im sure this was not healthy but the leaves were as crispy as potato chips! It was incredible.
