Ham is pink because it has been cured and salted. Pork Roast is white because pork meat when cooked or baked will turns white when done.. Hope it helps.

Ham comes from pink pigs raised in pink barns and fed pink feed, in ohio. Pork roast comes from white pigs raised in white barns and fed white feed, in iowa.

I would think for the same reason that chicken or turkey have white and dark meat. Maybe it's the part of the pig that it comes from.

Just a different part of the pig....just as chicken breast is white, and the meat from the legs or thighs is darker.

Different muscle groups... probably different myoglobin contents. (think white and dark chicken meat)....
