I think that maybe he filmed every stage of his shoe at different times, but close enough to make sure that it looked like it was all going at once.

Sry if u dont' get my technical language, but then I think that he...

...started filming up to the point where he starts "kicking", then stopped filming.
...tied his shoelace part way, started filming, kicked, stopped
...tied his shoelace a bit more, started filming, kicked, stopped filming

and etc...

It's actually pretty easy 2 do.
