put oil in pan, fry chicken. Cut up 2 or 3 tomatoes (or use a can of stewed tomatoes), cut up an onion, make them chunky. Put them in the pan with the chicken and cook 1-2 min. Add chicken base with appropriate amount of water or broth to cover chicken. Add 1-2 teaspoons of cumin. Simmer until chicken is tender. Eat with corn or flour tortillas. Yum!

How about fried chicken and rice in a cheese sauce.
For the sauce, make a basic white sauce - Make a roux from melted butter and flour or corn-flour mixed together, add half a pint of milk and stir while bring it to the boil until it thickens. Add grated cheese. Ideally, use a strong blue-cheese if you have it, with herbs, such as oregano, thyme and basil. Add cream or mayo if you have that.

MAC AND CHEESE WITH CHICKEN AND BROCCOLI
To make this dish even more decadent, add cooked chopped pancetta or cooked and crumbled smoked bacon.
1 pound skinless boneless chicken breasts
Olive oil (for brushing)
2 heads of broccoli, cut into florets (about 5 cups)
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons all purpose flour
4 cups whipping cream
1 cup grated Fontina cheese (about 4 ounces)
1 cup grated cheddar cheese (about 4 ounces)
1 pound pasta shells, freshly cooked
1/2 bunch fresh chives, chopped
Prepare barbecue (medium heat). Sprinkle chicken with salt and pepper. Brush both sides with olive oil. Grill until cooked through, about 6 minutes per side. Dice chicken and set aside. Cook broccoli in medium pot of boiling salted water until crisp-tender, about 3 minutes. Set aside.
Melt butter in heavy large saucepan over medium heat. Add flour and cook 2 minutes, stirring constantly. Gradually mix in cream. Bring to boil, reduce heat, and simmer 10 minutes, stirring frequently. Add both cheeses and stir until sauce is smooth. Season to taste with salt and pepper. Add pasta, chicken, and broccoli to sauce; mix well. Garnish with chives and serve.
Makes 6 servings.

I made black beans and rice on the stove, and am going to put that in tortillas with cheese and nuke. It's too warm here to turn on the oven.
