Preservatives are what keep the bread from molding. It's not just Italian bread- here in Eastern Eur, we buy bread every day in small quantities. What doesn't get eaten in about 48 hours (summer time) to 4 days (winter) gets moldy if not refrigerated. The big plus to this is you're always eating fresh bread and Wow, is that ever delicious! (Not to mention that you're supporting your local economy since it's all made locally, not shipped in from half-way across the continent!)
