It's called Rose Crust pastry or you could you shortcrust pastry but rose crust pastry is so much nicer, here's the recipe:
8 ounce Plain Flour
8 ounce Margarine
3 ounce Corn Flour
1 Egg
3 ounce Icing Sugar

Cream fat & sugar.
Stir in flour & cornflour.
Bind with an egg.
Leave to rest in fridge for 20 mins.
Roll out using lots of flour.
Bake at 180C for 10-12mins until pastry is only just firm & slightly golden crust, do not overcook

very shortcrust you cant buy it mr kipling is rubbish ...4oz plain flour 4ozs sugar, 4oz butter..delish..just double up if u want more..dont mess with it.. cold hands ..make a crumble add milk or to make as soft dough..let it rest. and roll out if it breaks dont worry.. its cos its so short..it doesnt have to look perfect its all in the taste...

Use half fat to flour (ie 8 oz plain flour. 2oz Butter, 2 oz Lard,2oz sugar ,cold water to mix) Leave ball of pastry wrapped in cling film in fridge for half hour before use.

Dunno how mr K does it but I use real butter insted of fat. Expensive but Mmmmmm!
