If it's a cold ham & cheese sando, mix some dijon with mayo. If it's a grilled ham & cheese, mix Heinz 57 with tabasco.

When I was a kid, we'd dip them in ketchup at school lunch, but probably because the school didn't have mustard.
Now it's only mustard. Preferable a spicy brown dijon.
