Formica stands up to just about anything you can dish out, and comes in all kinds of textures and colors, even resembling marble and granite.

Marble is also great, if you want to spend the money for it, it stands up well to time and abuse, and is easily cleaned.

The alternative? Being sneered at by your peers for not having a granite countertop, I guess

Faux granite or a multitude of countertops in a lot of colors. Look on web or go to kitchen decor departments in bigger stores.

Here's an interesting alternative i'm considering, Trespa. Comes in many colors and designs. Very durable, it's used in labs and costs much less than Corian. The free samples they've sent me are very nice.

I just remodeled my kitchen last year. Got onyx counter-tops, looks like granite, half the price. Love it.

They make many good products these days. Concrete is less expensive and can be toned to look great. Of course there is always a manufactured product. I would check out the stores for ideas.
