Put the hard cookies in a ziplock bag and put in a piece of apple. In a few hours they will soften.

Place it in a plastic bag with apple slices and the moisture from the apple will soften the cookie. Or, place in a plastic bag with other soft cookies for the same result.

Put the heel from your loaf of bread in the bag or container with the cookies. This works with brown sugar, as well.

Put them in a ziplock bag or covered bowl with a couple slices of white bread. They should be soft after an hour or two. Sounds weird but it works really well.
