Hoppin' John Recipe courtesy Emeril Lagasse
1 tablespoon olive oil
1 large ham hock
1 cup onion, chopped
1/2 cup celery, chopped
1/2 cup green pepper, chopped
1 tablespoon chopped garlic
1 pound black-eyed peas, soaked overnight and rinsed
1 quart chicken stock
Bay leaf
1 teaspoon dry thyme leaves
Salt, black pepper, and cayenne
3 tablespoons finely chopped green onion
3 cups steamed white rice
Heat oil in a large soup pot, add the ham hock and sear on all sides for 4 minutes. Add the onion, celery, green pepper, and garlic, cook for 4 minutes. Add the black-eyed peas, stock, bay leaves, thyme, and seasonings. Bring to a boil, reduce the heat and simmer for 40 minutes, or until the peas are creamy and tender, stir occasionally. If the liquid evaporates, add more water or stock. Adjust seasonings, and garnish with green onions. Serve over rice.

This is my own recipe for Hoppin' John
Add a little oil to a large sauce pan. Chop up raw bacon, onions, celery and green&red peppers. Saute until bacon is done. If you like hot 'n spicey, add a few jalapeno slices. Add one can chicken broth and a package of frozen purple hull, or crowder, or black eye peas. Cover and simmer until peas are tender. add more broth if needed. You want it to be soupy. You can serve this over cooked rice, or I prefer to mix the rice in with the peas and simmer a little to mix the flavors. Serve with hot buttered cornbread. Use collards or turnip greens as a side dish. Some people add them to the pot, but I prefer them seperate.

"Hoppin' John" - 12 servings
1 lb. dry black-eyed peas
8 cups water
1/2 lb. bacon; diced
1 medium onion; chopped
1 clove garlic; minced
1 bay leaf
2 tsp. salt
1/4 tsp. crushed red pepper
1/4 tsp. pepper
1 cup raw regular rice
1) In 5-quart Dutch oven or large pot over high heat, heat peas and water to boiling. Reduce heat to low; simmer 2 minutes. Remove from heat; cover and let stand 1 hour. Do Not Drain.
2) Stir in bacon, onion, garlic, bay leaf, salt, red pepper and pepper. Over medium-high heat, heat to boiling. Reduce heat to low; cover and simmer 20 minutes or until beans are tender.
3) Stir in rice; cover and simmer 15 minutes more or until rice is done. Serve immediately. Yields 11 cups.
