You can make lots of juices with carrots, but you need a juicer--a blender or food processor is NOT up to the job.
Oil and vinegar plus any spices, from salt and freshly ground black pepper, to finely chopped shallots or garlic, or citrus juices, are very good salad dressings. There are about 100-200 calories in a TBSP. of oil, but for a salad for 2 people, you can usually just use 1 TBSP. oil plus 2 or 3 TBSP. vinegar or citrus juice. (Whisk the oil, vinegar, S&P together in a bowl immediately before pouring onto the salad.) If you use quality olive or sesame oils, the approx. 50-75 calories per person is worth it. And significantly healthier than store-bought or cream-based dressings. I personally really enjoy the juice of one orange in sesame oil w/ a little dash of salt and pepper.

Carrot juice alone is pretty good. You could also mix it into a smoothie. As far as lo-cal dressing, try balsamic vinegar, olive oil and spices (e.g pepper, garlic, oregano, etc.).

Low calorie dressings... nothing with olive oil. One Tablespoon of light olive oil comtains 120 calories. That's not low calorie!

"Chunky Blue Cheese Dressing" - 4 cups
1/4 cup milk
3 cups mayonnaise
1 cup (8 oz.) sour cream
4 oz. crumbled blue cheese
2 tsp. garlic salt
Place all ingredients into blender container; cover and process until smooth. Refrigerate until serving time.
