Why do we only drink milk from cows and not other animals?

Because cows produce a lot of milk per animal, and are probably the most efficient milk producers (Holsteins, in any case).
This is considering feed intake, waste creation, animal size, length of lactation, and labor necessary for the producer.

People drink the milk they can get. There are a lot of people that drink goats milk. When my grandfather was a boy he couldn't drink cow milk so he drank mule or horse milk. One time in Spain I drank sheep milk (the cheese from sheep milk is wonderful. In some parts of South America some people drink llama milk. And when many of us were babies we drank mommy milk.
