rusrus' Lemony Rice Pilaf
1-2 carrot(s), diced super-fine
1-2 celery rib(s), diced super-fine
1/2 onion, diced super-fine
4 cups chicken broth
4 tablespoons butter
1/2 lemon, sliced very thin
2 cups long grain white rice
1 teaspoon thyme
1) Saute the vegetables in the butter until slightly soft. Add the rice, and cook until slightly browned - about 5 minutes (think Rice a Roni).
2) Add thyme and 2 cups chicken broth and cook, stirring ocasionally, with the lid on. When the chicken broth has been absorbed, add another cup and put the lid back on. When the liquid in the pot is absorbed, keep adding liquid, a little at a time, until the rice is no longer absorbing liquid - that means the rice is ready. Depending on the rice, you may need more than 4 cups of liquid.
3) Add the lemon slices and cook for 1-2 minutes - just long enough for the lemon to give-up some flavor and get soft.
4) Add a handful of fresh parsley (optional) and serve it up.
Note: if you run-out of chicken broth, you can use water. The chicken broth adds flavor - with the addition of 4 cups, that's plenty of flavor. Also, be sure to not use "instant rice." That's just not going to work.

Classic rice recipe without any bells or whistles.
Ingredients
1 c Uncooked rice
2 c Cold water
1/2 To 1 teaspoon salt
Instructions
1. Put rice, water, and salt in a 2-quart saucepan; cover with a tight-fitting lid. Bring to a vigorous boil then turn heat as low as possible. Continue to cook 14 minutes. Do not stir or lift cover. Turn off heat; allow rice to steam, covered, for 10 minutes more Makes 3 cups.

Instead of simmering the rice in water, simmer it in swansons canned chicken broth.
The rice soaks up the chicken flavor.
In a small sauce pan, add butter, frozen peas and carrots and throw in some chopped onion and diced water chestnuts.
Heat them up and add it to the rice, It's delicious.
Another recipe, that's even easier is this.
Heat up 2 cans of cream of mushroom or cream of chicken soup and stir it into the rice. This one is really fast.
You could even use cream of brocoli or asparagus or cream of cheddar soup.
Easier still, just buy some Rice A Roni or Uncle Ben's wild rice and just follow the directions on the box.
