Learned this from Alton Brown off the "Good Eats" show.
It's really very good.

1 cup creamy peanut butter
2 sticks unsalted butter cut in cubes
2 cups powdered sugar
2 t. vanilla

Place peanut butter and butter in med. microwave safe bowl.
Cover bowl with plastic wrap.
Poke 3-4 holes in wrap.
Microwave on high for 2 min.
Carefully remove plastic wrap-stir.
Re-cover.
Microwave on high for 2 more min.
Carefully uncover.
Stir in vanilla and powdered sugar until disolved (my sugar stayed the tiniest bit lumpy but didn't affect the taste. You could try sifting it first)
Pour into buttered wax paper lined dish (I used a pie plate)
cover with waxed paper
Refrigerate until firm
