Roll it into a log (or logs if you really have a lot!), wrap it tightly in saran wrap and then in foil and freeze it. That way whenever you want, you can bring out the roll, slice some off (after defrosting) and bake like you usually would. I make extra on purpose for just this reason..... Happy New Year!

It is fun to make stained glass cookies. Simply roll out dough to 1/4" thickness. Cut dough into shapes and remve center. Leave a ring of dough at least 1/2" (or more) in width. Crush hard candies (like lifesavers) and sprinkle into center once the cookies are on the baking sheet. Bake as you would for ordinary sugar cookies. Let cookies cool COMPLETELY before attempting to remove from the baking sheet. Get ready to suprise and inspire friends and family!

you could make a dessert pizza.
spread the cookie dough out in a pan and bake it (kinda like a large cookie) then when it comes out you can put a bunch of good stuff on it and slice and serve. ie, jam, frosting, fruits, candies, pnut butter

you can also make ice cream sandwiches with them, or crumble the baked cookies and make a trifle. you can make a crust for a cheesecake, or add stuff to the raw dough and then bake to have a new kind of cookie

i use it for pie crusts, just line the pie tins with it and bake when they are cooled i mix up some instant pudding, fill them add a garnish--chocolate curls, toasted cocoa nut lemon slices or zest, also if i have a lot of extra i will bake them and make home made sugar cookie crust for cheese cake instead of using graham cracker crust, i just crumble the cookies and add a little butter, they are very good for these things.

Get muffin pie tin,
now make little crusts in the tin for mini tarts bake till browned and fill with vanilla pudding and top with sliced fruit

Best thing is to freeze it. Wrap it in wax paper then with aluminum foil. Take it out for Valentines Day or whatever it keeps for about 6 months.

I think the best is (if you don't mind a small risk of salmonella) just eat it. It tastes better than the cookies in my opinion. Do this especially if you used pastuerized eggs.

Cookie dough freezes really well. Why not freeze it till later? :)
