besides butter or margarine you can use applesauce, bananas or other mashed fruit - it also takes out the fat

If you are making say, chocolate chip cookies, you can substitute butter, just melt it before adding to the batter so it keeps the cookies chewy. If you substitute margerine, it may make the cookies too tough because of the high water content.

You might try butter, but I've never tried it and don't know how it will turn out. I do know that pie crusts can be made with either shortening or butter, though.

You can use any of the following: butter, margerine, vegetable oil, however, they will not come out the same. Shortening is used to make it lighter/fluffier. You can not substitue in that matter.
