My cousins wedding is this weekend and his mother asked me to bring a salad of some sort, on such short notice I don't know what to bring. The main dishes will be turkey, roast beef, and ham. Any suggestions for a bad @$s salad that will complement what is already being served? The wedding is saturday. HELP! I will pick the best answer tomorrow

My standby is a very simple but yummy pasta salad. I use tri-colored pasta, Italian dressing, black olives and cheese squares (or crumbles) - grape tomatoes can be added, onions, peppers for a great color, whatever you like!
Any kind of cheese will work and it will set the theme for the salad. Feta for Greek, pepper jack for spicy, cheddar for a bold flavor etc. I always add a touch of sugar to the dressing too so it's not too vinegary. Save the dressing for the last minute if you can.

If you mean green type salad, basic components of greens, fruit, cheese and nuts seem to be big these days. Apples and walnuts with goat cheese is one example. Apples go surprisingly well in a green salad, as do grapes. Orange slices and almonds with a light tasting feta. Pears and Gorgonzola with pecans. Berries might be interesting with the right vinaigrette. OK now I'm just daydreaming, sorry :)

Here's one of my favorites, it's a room-temperature served salad, and holds for hours without wilting...............Hope this helps.......Even the picky broccoli haters love this salad:


1 head broccoli
6 to 8 slices cooked bacon, crumbled
1/2 cup chopped red onion
1/2 cup raisins, optional
8 ounces sharp Cheddar, cut into very small chunks
1 cup mayonnaise
2 tablespoons white vinegar
1/4 cup sugar
1/2 cup halved cherry tomatoes
Salt and freshly ground black pepper

Trim off the large leaves from the broccoli stem. Remove the tough stalk at the end and wash broccoli head thoroughly. Cut the head into flowerets and the stem into bite-size pieces. Place in a large bowl. Add the crumbled bacon, onion, raisins if using, and cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently.

See how easy that was??? One knife, one bowl...........Enjoy and Happy 2007!!!

Pea salad is my default salad for potlucks.

Easy Pea Salad

Ingredients:
1 lb. Frozen Baby Peas
5 oz Sweet Pickle Relish
2 Stalks Celery-Diced
2 Whole Dill Pickles-Diced
1 Small Jar of diced pimientos-drained
10oz Cheddar Cheese-Cubed
1/4 Cup Sweet Yellow Onions-Diced
1/4 Cup Green Onions-Diced
2 Boiled eggs-chopped
1/2 Cup Salad Dressing

Preparation:
Put all ingredients except salad dressing in a large bowl, stir until well mixed. Add salad dressing and stir until creamy. Refrigerate for at least two hours. Serve chilled, and enjoy!

Serves: 8

Spaghetti salad is awesome and goes with just about anything. All you do is cook some angel hair pasta (not sure how many people you have to feed)drain and rinse in very cold water,cut some cherry tomatoes in half,maybe some cucumber and if you want,different colored peppers chopped very small,mix in Wish-Bone Robusto Italian dressing and you're done! (I've tried lots of different brands of dressings and found that Wish-Bone works best with this salad.) Good luck and I'm sure whatever you make will be just fine,don't stress!

My aunt always brings a pasta salad and it's a hit with our family.

In a large bowl Start with:
1 package of spaghetti noodles - cooked and drained

add:
diced green pepper, diced red pepper, diced yellow pepper, diced
onion, diced cucumber, diced tomatoes

optional:
diced pepperoni

Mix all ingredients together and top with "suddenly salad" pasta seasoning - follow directions on package.

Adjust according to how many people will be there.

A salad that was served at my wedding that may not sound that appetizing but is super, super good! Ramen noodles, uncooked, small broccoli and cauliflower florets, cherry tomatos (the smaller the better) carrot shavings and Italian dressing. Interesting textures, great tastes. Salt and pepper to taste.

Smoked Salmon Pasta Salad

INGREDIENTS

* 1 (8 ounce) package farfalle (bow tie) pasta
* 2 tablespoons extra virgin olive oil
* 1/2 pound cucumber, sliced
* 8 ounces smoked salmon, chopped
* 1 large tomato, sliced
* 1 small red bell pepper, julienned
* salt and freshly ground black pepper to taste
* 1/2 cup shredded Monterey Jack cheese, divided
* 1/2 cup fat free blue cheese salad dressing

DIRECTIONS

1. Bring a large pot of lightly salted water to a boil, and add farfalle pasta. Cook until al dente, 8 to 10 minutes. Drain, and rinse under cold water. Transfer to a serving bowl, and gently toss with the olive oil until all the pasta is coated. Cover, and chill at least 30 minutes.
2. Arrange the cucumber slices around the edges of the pasta. Top pasta with smoked salmon, tomato, and red bell pepper. Season with salt and pepper. Top with Monterey Jack cheese and salad dressing to serve.

lemon lintil salad

INGREDIENTS
5 tablespoons olive oil, divided
1 tablespoon lemon juice
2 teaspoons red wine vinegar
2 teaspoons sugar
1 teaspoon Dijon mustard
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
1 garlic clove, minced
3 cups water
1 cup dried lentils, rinsed
1 bay leaf
1 large tomato, diced
1/2 cup minced fresh parsley
2 green onions, sliced
DIRECTIONS
In a small bowl, combine 4 tablespoons oil, lemon juice, vinegar, sugar, mustard, thyme, salt, pepper and garlic; set aside.
In a medium saucepan, bring the water, lentils, bay leaf and remaining oil to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Remove from the heat. Let stand for 30 minutes; drain if necessary. Discard bay leaf. Add the tomato, parsley, onions and dressing; mix gently. Cover and refrigerate for at least 2 hours.

1 pkg (6 oz.) cherry flavored gelatin
2 cups hot water
1 lb. can whole cranberry sauce
1 lb. can jellied cranberry sauce
1/4 cup lemon juice
8 ounces cream cheese
2 cups whipped cream or whipped topping
1/2 cup chopped walnuts or pecans
PREPARATION:
Dissolve gelatin in water. Add cranberry sauces and lemon juice. Pour into a lightly oiled cake pan. Chill until firm. Blend together softened cream cheese, whipped cream and nuts. Spread on top of gelatin. Refrigerate overnight or for several hours before serving
This WORKS with everything and is good enough to be dessert but it isn't.

This is my favorite easy salad.

In a shaker or small bowl, put the zest of one lemon, the juice of two lemons, a spoonful of minced garlic, a hearty pinch of oregano (~1 tsp), 1/3 cup olive oil, salt and pepper, and shake or whisk.

Boil 1 cup of orzo and toast about 1/3 cup of pine nuts. Chop up several handfuls of spinach, and 1-2 green onions. Drain the pasta and toss with the spinach. Open a can of garbanzos, drain, and add those and the dressing and pine nuts and toss. Sprinkle with feta crumbles and you're done!

You can add about anything to this. I've even thrown in sun-dried tomatoes.
