After leaving the nest male canary's will try find a mate so they will more often the a female canary.

Until a bird either sings or lays an egg, it is very hard to sex a canary. It is rare for a female to sing, so this a very "hands off" way to tell. Some males tend to be territorial, so if you have more than one male in a cage, they may chase each other or sing competitively.

If you are really intent on finding out, look for an "Avian" vet, and ask if they treat small birds.

If you are interested in buying a canary, find a local breeder, and ask if the bird you are interested in is a proven male; has he raised a clutch with a hen already? Has the breeder witnessed the bird singing?

There's some complicated way to turn the bird over and look for a bump or a hump, but I don't know how it works exactly. I'd say the best way to know for sure is to ask your vet.
