Company coming, 10-12 people, I have hamburger and chicken that has been cooked and deboned. Any ideas? I have to cook when I get home from work -- nothing with "anything creamy" I have a finicky eater. We are having Mexican tomorrow and Italian the next day!

I just found out an hour ago that they are coming today instead of tomorrow. I have everything planned for the 17 I will have for the next four days -- just not today's last minute.

Oven fry the chicken using a coating of corn flakes. Make meat balls and roast them in the oven at the same time. Toss potatoes in the oven as well. The meatballs will take the shortest amount of time and the potatoes the longest.

The general consensus is that you will make a Chicken Veggie pasta with the chicken, and you can use the beef for meatball appiteezer.
Now you may want to go Pesto with the pasta if you do not want a cream base sauce for the dinner.

plenty salad and G bread and you are set.

Main thing is when entertaining relax the guests always seem to have a good time no matter what.

Chicken Spectacular

3 cups cooked chicken

1 pkg Uncle Ben's Combination Wild & White Rice, cooked

1 can cream of celery soup

1 medium jar sliced pimentos

1 med onion, chopped

2 cups French style Green Beans, drained

1 cup Hellman's Mayonnaise (please don't substitute)

1 can water chestnuts, diced

Salt and Pepper to taste

Mix all ingredients. Pour into a 2 1/2 or 3 quart casserole.

Bake 25 to 30 minutes at 350° F.

Serves 16.

White Chili:

7 cans Great Northern Beans
1 onion (diced)
Chicken (cut into bite sized pieces)
2 teaspoons each of: oregano, cayenne pepper, cumin

Just pour your beans and the juice into a large pot, add the remaining ingredients and heat until it reaches your desired temperature.

It's quick, easy, inexpensive and makes alot.

budget wise chicken pie. It is great all my kids eat it and you know how picky they can be

INGREDIENTS
1 recipe pastry for a 9 inch double crust pie
1 large carrot, shredded
1 large potato, shredded
1 teaspoon dried minced onion
2 tablespoons margarine
2 cups cubed, cooked chicken
1/2 cup chicken broth
1 teaspoon salt
1/2 teaspoon ground black pepper
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C.) Divide dough into 2 pieces and shape into balls. Roll out one ball of dough to fit a 9 inch pie plate. Place bottom crust in pie plate. Roll out top crust and set aside.
In a large saucepan, saute the shredded carrot, potato and minced onion until soft. Remove from heat and alow to cool.
Mix in the chopped chicken, chicken broth, salt and pepper. Pour into bottom crust. Cover with top crust, seal and crimp edges.
Bake in the preheated oven for 20 to 25 minutes, or until golden brown.
