whats a standard amount of ingrediants for a vinaigrette? I want to play around and make my own things up but not sure where to start.

Basic Balsamic Vinaigrette
1 Tbsp balsamic vinegar
Pinch of salt
1/8 tsp freshly ground pepper
3 Tbsp extra virgin olive oil
Combine vinegar, salt and pepper. Whisk in olive oil. Serve over salad.

Vinaigrette Dressing:

This recipe goes with Avocado Salad

1 cup olive oil
1/4 cup white wine vinegar
2 teaspoons coarse-grained mustard
1/4 teaspoon salt
2 shallots

Process all ingredients in a blender until smooth, stopping once to scrape down sides.

Yield: 1 1/4 cups

I start out with a one to three ratio. One tablespoon of vinegar and three of oil. Use different vinegars, different oils, add some mustard maybe garlic, different herbs, a bit of sugar, maybe lemon juice instead of the vinegar. You might like more oil and less vinegar. Just fool around, it's fun!!
