I know frittata is made with eggs. Generally, I don't like eggs at all -I do not like the gooeyness or jello-like consistency. And I don't like the egg flavor. Having said that, occassionally, I will have a small piece of breakfast casserole that is good. Sometimes with enough spice to cover up the egg flavor. The mixture tends to hide the egg-like consistency. I'm hoping that a spicy tex-mex or denver frittata is another option.

A frittata is an omelet - yes, it tastes like eggs. I don't understand, if you dislike eggs so much, why you feel you have to force yourself to eat them - especially in a form where eggs are the main ingredient. If you feel you must eat eggs in some form, use them as a minor ingredient - like in a cake batter.

It requires a lot of eggs, but it is not eggy.

Ingredients
10 slices bacon, chopped
4 ounces diced onions
3 medium potatoes, cooked with skins on and diced
11 eggs
1-1/4 cups milk
1 teaspoon salt
1/4 teaspoon pepper
4 ounces cheddar cheese, shredded
4 ounces Swiss cheese, shredded

Preheat oven to 350 degrees. Saute bacon and onions. Drain fat. Put bacon mixture in the bottom of a 10-inch quiche pan. Sprinkle diced potatoes over mixture. Beat eggs and milk, then add salt and pepper. Pour over potato mixture. Sprinkle the cheeses over the top. Bake for 1 hour and 15 minutes

Basically a frittata is an open faced omelette. The eggy taste would depend on how many eggs used compared to the amount of filling. If you used a thin layer of egg and the rest is filling you would probably find it to your liking.

Frittata is a baked egg dish from Spanish origin. You may put any ingredients inside. I like sausage cheese tomato mushroom and onion.

In iron skillet or baking dish place 2 tbls olive oil coat pan and place pan in 350 oven.

While pan is heating prepare ingrediments:

1/2 onion juilianne,
1/2 cup mushroom ,
1/2 cup chopped tomato,
2 link italian sausage chopped,

When pan is hot (5 min) place these ingrediments in pan and return to oven, these ingredaments should cook for 10 min, or till onion is translucent.

Remove pan from oven and add:

8 egg beaten,
1/2 cup cheese,
1/4 tsp basil,
1/4 tsp thyme,
1/4 tsp oregano,
salt and pepper to taste,

Stir in ingrediments and return to oven for 15-20 minutes till center is firm.

Eggless Potato Frittata

Ingredients:
2 pounds russet potatoes
sea salt -- to taste
1/3 cup olive oil
2 onions -- sliced
2 cloves garlic -- minced
fresh ground black pepper -- to taste

Directions:

Scrub potatoes and place in a saucepan with cold salted water to cover. Bring to a boil and cook until tender, about 25 - 35 minutes. Drain, set aside to cool In a large skillet, over low heat, heat olive oil and saute onion and garlic 10 minutes, or until soft. While onions cook, peel and slice potatoes. Mash and combine with onions. Gently press potato onion mixture into the pan to form an even layer. Cook over low heat until bottom browns, about 10 - 15 minutes. Put a plate over the skillet and invert. Slide frittata back into pan and continue cooking another 10 minutes. Serve warm or at room temperature.

yes, eggs hold it all together. It's definitely an egg dish. using many fresh herbs, and strong ones, like rosemary, may help cut the egg flavor/smell.

i just had some eggs that were sprinkled with paprika and found it quite tasty. try that.
