Makes about 2 cups
INGREDIENTS
1/2 cup cilantro leaves
1 cup cubed papaya
1/4 cup cubed red bell pepper
1/4 cup diced red onion
1 small jalapeño pepper, seeded and minced
2 tablespoons freshly squeezed lime juice
Put the ingredients in a small bowl, mixing with a spoon until everything is thoroughly melded in. Cover and refrigerate until you are ready to use

Papaya Salsa
2 ts Sauce, plum
1 ts Sauce, soy
1/4 c Asian pear, chopped
-- diced
1 ts Cilantro
1 ts Jalapeno OR
1 ts Serrano
1 tb Onion, purple
1 tb Juice, lemon
1 ts Honey OR
1 ts Sugar
1 tb Pepper, red, diced
Mix all of the ingredients together and adjust the flavor with
honey, or brown sugar.

Papaya and Cilantro Salsa
Ingredients:
2 tablespoons extra virgin olive oil
1 teaspoon slivered garlic
1 teaspoon paprika, mild or hot to your taste
red pepper flakes (optional)
1 ripe papaya, peeled, cut in half, seeded and cut into fine dice
2 tablespoons fresh lime juice
sea salt
1 tablespoon chopped fresh cilantro
Preparation:
In a small nonstick skillet, combine the olive oil and garlic over medium heat until tender but not browned, about 3 minutes. Stir in the paprika and red pepper flakes, if using, for 1 minute.
Remove from the heat. Add the papaya, tossing to combine. Add the lime juice and season with salt to taste. Stir in the cilantro. Cover and refrigerate until ready to serve.

Papaya-Black Bean Salsa:
2 cups diced peeled papaya
1 large red bell pepper, roasted, peeled, and diced
3/4 cup sliced green onions
1/4 cup fresh lime juice
3 tablespoons raspberry vinegar or white wine vinegar
3 tablespoons pineapple juice
2 tablespoons brown sugar
1/8 teaspoon salt
1/8 teaspoon ground red pepper
1 (15-ounce) can black beans, rinsed and drained
Combine all ingredients, and stir well. Chill.
Note: Unlike our other salsas, this salsa is best used within 1 to 2 days. After this, the enzymes in the papaya begin to soften the beans.
Yield: 4 cups (serving size: 1/4 cup)

1/2 sweet onion, peeled and diced
2 tablespoons chopped fresh cilantro
2 tablespoons balsamic vinegar
salt and pepper to taste
DIRECTIONS
In a medium bowl, mix mango, papaya, red bell pepper, avocado, sweet onion, cilantro, and balsamic vinegar. Season with salt and pepper. Cover, and chill in the refrigerator at least 30 minutes before serving.
