They can be, it's a matter of taste:

Red Beans 'n Rice

1 pound dried red beans
1 ham bone or
1 lb. smoked sausage, sliced
1 cup chopped onions
1/4 cup chopped green onions
1/2 cup chopped green peppers
salt and pepper to taste
cooked rice

Wash and sort out beans. Add enough water to cover beans completely in a 4 quart saucepan and soak overnight. The next morning, heat the beans to a slow boil.

Add all the remaining ingredients and cook slowly for 3 hours. Add more water during cooking, if necessary.

The beans are done when they become soft and the water boils down to form a thick gravy.

Season with salt and pepper. Serve over cooked rice.

Usually, in the south, the kidney bean is referred to as a red bean. Many people also use a red kidney bean and refer to this as a red bean. Personally, I prefer the pink pinto or the kidney bean for chili or red beans and rice.

I couldn't just sit around and do nothing like my doctors suggested.

They didn't want me to do anything or to take herbs or herbal remedies, but I had to try something - they just wanted me to do dialysis!

This program allowed me to take control of my health. I went from Stage 4 to Stage 3 kidney disease.

It was easy to do and my BUN, creatinine and anemia are all in better ranges.
