Shepards Pie...big casserole dish, brown some chopped meat, layer on bottom. On top of meat layer corn niblets ( I use half can regular half creamed corn, doesn't get so dry). Then mashed potatos on top...little paprika to brown the mashed.

Double this up and you're covered, fry up some rough chopped potatoes, Microwave frozen mixed veggies, you're eating in 30mins.
Top of Stove Meatloaf

Ingredients

1/2 lb Ground beef (about 1 cup
Lightly packed)
2 tb Uncooked rolled oats
1 tb Finely chopped onion
3 tb Milk
1/2 ts Salt
Pepper as desired
1/4 c Water
1/2 c Tomato sauce

Instructions

Put first 6 ingredients in bowl;mix well.Shape into 2 loaves. Brown loaves on all sides in greased fry pan over medium heat. Pour off fat.Add water.Pour tomato sauce over loaves.Cover and cook over low heat 30 minutes.Add more water during cooking if needed.

Our family's favorite is cheeseburger macaroni. Brown some hamburger with diced onions, salt, pepper and garlic powder. Make the macaroni according to directions. In a 2 qt saucepan, melt 2 tablespoons of butter, add a little flour, stir till it makes a paste, cook for 1 minute to get rid of the flour taste, add 2 cups of milk slowly to prevent lumps, add 8 oz of shredded cheese, stir often. Drain macaroni, add thickend cheese sauce, and well drained hamburger, Mix all together, add a veggie and you've got a quick and easy meal. Takes about 30 minutes total

I make something similar to lasagna, but less trouble.

Get 1 pount of ground beef (or chuck, or whatever) and start cooking it. While that is going, cook a medium sized (8oz, i think) box of Ziti or Penne pasta.

Once the meat and pasta are cooked, drain them, then mix the pasta, meat, and a jar of spaghetti sauce in a 9x13 pan. Top this with cheese and bake at 350 degrees for about 20 minutes, or until all the cheese is melted.

If you like more meat, you can 2 lbs of hamburger, also, you can add onions or green peppers, or top it with pizza cheese and pepperoni or sausage.

Corn Pone Pie

Mix batter for cornbread--from scratch or from a package. If you use Jiffy, I recommend mixing two packets. Set batter aside.

In a cast-iron skillet, brown one pound of hamburger with a diced yellow or white onion, salt and pepper. Drain.
Add a drained can of "Ranch Style Beans" and a drained can of diced tomatoes.
Pour the cornbread mix over the top of the meat mixture in the skillet, leaving about 1/2" for the cornbread to rise. Stick it in a pre-heated oven until cornbread is done--cracked across top and golden brown.

Green beans are a great side dish with this. And, of course, simple lettuce-and-tomato salad with ranch dressing.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.



Garlic Chicken Breasts with Brown Sugar
This is so easy and very good!
Tbs oil
6 or more garlic cloves, minced
1 Tbs brown sugar
3 boneless skinless chicken breasts

Preheat the oven to 500F.

Heat the oil over medium heat, add the minced garlic and cook slowly, stirring constantly, until softened. Make sure the oil is not too hot. You don't want to brown the garlic and it can get to that point quickly if you're not careful.

Take it off the heat after 5 minutes or so and add the brown sugar and stir it in.

Line a shallow roasting pan with foil and spread oil across the foil. Lay your boneless skinless chicken breasts across it, spread the garlic/oil/brown sugar mix across the chicken. Bake for 15 minutes, or until done.




Taco Soup


1 pound extra lean ground beef -- rinsed and drained

1 Large onion -- chopped

48 ounces canned pinto beans -- drained

3 cans 16 ounces canned corn -- undrained

16 ounces canned tomatoes -- undrained

16 ounces tomato sauce

1 1/2 cups water

4 1/2 ounces green chili pepper

1 envelope Hidden Valley Dip Mix

--HOMEMADE TACO SEASONING-- --

1 1/4 ounces

2 tablespoons chili powder

1 1/2 tablespoons cumin

1/2 teaspoon red pepper flakes -- or powder

1 1/2 teaspoons garlic powder

1 1/2 teaspoons onion powder



Cook beef and onion until beef is browned; drain, mix beef and onion with other ingredients in a large pan. Bring mixture to boil, reduce heat and let simmer for 15 minutes.

Makes 3 1/2 quarts of soup. Make 14 (1 cup servings)

NOTE: This soup freezes well and can be kept in freezer for up to 3 months.

VARIATIONS: Use black beans instead of pinto beans or do a mixture of them.

Enchilada Casserole


Put a layer of corn tortillas in the bottom of 9x13 casserole pan.
Preheat oven to 350.
Brown 1lb ground beef. Mix in 1 can of enchilada sauce, 1 can of sliced black olives, 1 jar of medium salsa, 1/2 diced onion. Mix it all well.
Pour 1/2 of mixture over tortillas.
Add 1 cup shredded cheddar on top.
Put another layer of tortillas down, then add the rest of meat mixture on top. Top off with another 1 cup of shredded cheddar.
Bake for 20 minutes and serve with fresh diced tomatoes for garnish.

Brown pound of ground meat with a package of brown gravy powder.
Add couple cups of water and cook it over low heat until water turns to gravy.

Serve over mashed potatoes or rice or spaghetti or noodles
