I say within 24 hours. They should have had the cash upfront and put aside prior to the bet.
Obviously this person hasnt paid you yet so I say go ahead and start beating. Even if they have money in hand beat them anyway so they know next time you wont pussy foot around.

If they don't pay up 5 minutes after the game, beat them right there.

One week is just fine with 20% juice, every week you add more juice and only beat when the payment is enough to bail you out of jail.

if its a game that is online that allows bets the game will automaticly take it from them and place it in your account if they dont have it then they should not of been allowed to bet and if they did anyways then it should automaticly take it out of the future game they will play, if it not through online gaming then you on your own up to you to decide.

Payment should be automatic(game's end). If you can't afford immediate payment, then they shouldn't have bet.
