Talking about job hunting, is it better to speak one foreign language very well, almost like a native speaker, or to have a conversational level in two or three foreign languages?

I know the ideal situation would be to be fluent in several languages, but there's no time for everything!

Please share your opinions and experiences on this. Thanks!

Of course when I say "fluent in one language" I mean "fluent in one FOREIGN language". My mistake, sorry ;o)

It depends on the job you're applying for. If a company is working extensively with foreign partners spread more or less all over the world, then it will look for fluency in as many languages as possible plus quasi-native knowledge in one language which is a (regional) priority.
Another good situation is: the company has a branch or something in a certain country and wants to expand in its neighbouring countries. If, then, you need a quasi-native knowledge for the country you'll be basede in and a good command of the languages of the neighbouring countries. For an ordinary secretarial job, English (as a foreign language) plus French, Spanish, Chinese, Arabic or other bigger languages, so 2 or 3 in total, at a decent level, is enough.

fluent in just one language means...just nothing as there are so many people fluent in one language. the point is to be skilled in several languages, at least 2 or 3. then it obviously depends on the kind of job you're longing for.

It depends on what job you want to have. Some jobs need many languages but some need as many as possible but fluent (like secretary)

Fluent in one or two, intermediate - conversational in others.
But it depends on the type of job you are going to hunt.
Depending on the case, you may need absolute fluency
or conversational skills+technical terms (if you are a doctor, for example).

It would depend on the job. I'm sure there are jobs for which one would be more desirable, others for which the other would.

Very true that it depends on the job.
