For instance, i pay my bills online through bill payer, but would writing checks improve my credit score/establish a better credit history?

Writing checks alone won't help improve your credit score; checks aren't reported as "credit", but writing bad checks may impact your score in a negative way.

Credit score refelects the the payments being made on time (and the amount ve the debt). How the the payment is made (Cash, check, pay pal, or on line) does not matter.

it doesn't matter what method you use to pay your bills, as long as you pay them is what makes your credit history.
