That isn't exactly true, per se. Creations do not always reflect an absence of the creator. Even in the analogy you use of a knife; we do not need a knife to create separations. Yet, we use knives because they allow us to make such separations faster, easier.
We do not have to invent cars to get from one place to another, but the inventing does allow us to do so faster, and to experience things in a way we could not previously do before (its not possible to sleep on a cross-country trip if you are walking, although it is possible if you are a passenger in a car).
Beavers do not need knives to cut wood, cats don't need soap to cleanse themselves, and giraffes don't bother to wear suits every morning. One aspect of creation does not have to follow the rules of every other aspect, especially if your ultimate wish to express diversity and the ability of each creation to live in harmony with the others.
As for why create us, how about a simple question: imagine you have an absolutely great life, even better than you could ever have dreamed of. Might you not want to share that life with others, to create others so that, they too, can have the chance of having a great life, so that one can thus share the experience?
Just because God is omnipotent doesn't mean that God doesn't enjoy conversations: it simply means that God knows ahead of time the conversations that will be enjoyable.

Read the little book "As a man thinketh" by James Allen then read "The Impersonal Life" by Joseph Brenner, the author was unknown until after his death. "God dwells within you as you." You have unity with God in unconditional love within your heart. As the colors of the rainbow are contained within sunshine, so to are all things contained within Gods unconditional love.

This is the main, exact reason why we were created by God the All Mighty, to worship and follow Him. Does God need us? No, all He wants us is to obey Him, and worship Him as He should be worshipped, as He is the only One worty of worship, and we should do. Why should weworship Him? He create us and gave us everything we can ever ask or and need. So the least we can do is be greatful to Him, everytime, because he is the All Mighty, that has given us so much. He is nothing like us:
1 Say (O Muhammad (Peace be upon him)): "He is Allah, (the) One.
2 "Allah-us-Samad (The Self-Sufficient Master, Whom all creatures need, He neither eats nor drinks).
3 "He begets not, nor was He begotten;
4 "And there is none co-equal or comparable unto Him."
[Surah al-Ikhlas 112:1-4]

Well, if there is a God. Then he's not as powerful as we thought due to your points above. Perfection will only create perfection. We have flaws, thus God has flaws. That doesn't mean he not greater than us, just not all powerful. If he's lonely, then he's not perfect either. Companionship.... Flaw!
