Here's my standard recipe WITH the alcohol. I guess you could substitute a little banana extract. Like a tablespoon or two.
Two oz. butter
One cup brown sugar
Half a teaspoon of cinnamon
Two oz. banana liqueur
Four bananas, cut in half lengthwise and then in half crosswise
Two oz. dark rum
Combine the butter, sugar and cinnamon in a skillet over low heat and stir until the sugar dissolves. Watch the heat and stir almost constantly to prevent the mixture from burning. Add the banana liqueur. Add the bananas and cook until they soften and start to brown. Next, add the rum and tip the pan slightly so the flames ignite the rum. (This is known as flambéing). After the flames subside, place four pieces of banana over vanilla ice cream and spoon some of the sauce over them.

Bananas Foster is a dessert made from bananas and vanilla ice cream, with the sauce made from butter, brown sugar, cinnamon, dark rum, and banana liqueur. The butter, sugar and bananas are cooked, and then the alcohol is added and ignited. The bananas and sauce are then served over the ice cream. Preparation of the dish is often made into a tableside performance.
The dish was created in 1951 by Paul Blangé at Brennan's Restaurant in New Orleans, Louisiana. It was named for Richard Foster, a friend of Owen Brennan's and New Orleans Crime Commission chairman

Ingredients needed:
8 tablespoons butter, cut into cubes
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
4 ripe bananas, peeled and cut lengthwise into halves
1 cup banana liqueur
1 cup Myers Rum
1 pint vanilla bean ice cream
8 (about 1-inch thick) slices of yellow pound cake
Powdered sugar in a shaker
4 sprigs of fresh mint
In a large saute pan, melt the butter. Stir in the brown sugar and cinnamon. Add the bananas and baste them with the syrup for 2 minutes. Pull the saute pan off the burner. Carefully add the banana liqueur and rum. Place the pan back on the stove and shake the pan a couple of times. The pan should flame, if not, ignite the pan with a match. Shake the pan back and forth until the flame dies, basting the bananas continuously. To assemble, place two scoops of ice cream, between two slices of pound cake, forming a sandwich. Place the sandwich in the center of a shallow bowl. Spoon two banana halves on top of the sandwich. Spoon the sauce over the top. Garnish with powdered sugar and fresh mint.
Yield: 4 servings
Just do not add the
1 cup banana liqueur
1 cup Myers Rum
and it still tastes amazing!

Alton Brown's Banana Foster
.
2 servings 12 min 5 min prep
Change to: servings US Metric
2 tablespoons unsalted butter
1/4 cup dark brown sugar
1/4 teaspoon ground allspice
1/2 teaspoon freshly ground nutmeg
1 tablespoon banana liqueur
2 under ripe bananas, sliced in half lengthwise
1/4 cup dark rum
Substitutions: 1/2 - 1 tsp rum extract = 2 tbsp rum
Add brown sugar, allspice and nutmeg and stir until sugar dissolves.
Add banana liqueur and bring sauce to simmer.
Add bananas and cook for 1 minute on each side, carefully spooning sauce over bananas as they are cooking.
Remove bananas from pan to a serving dish.
Bring sauce to a simmer and carefully add the rum.
If the sauce is very hot, the alcohol will flame on its own.
If not, using stick flame, carefully ignite and continue cooking until flame dies out, approximately 1 to 2 minutes.
If sauce is too thin, cook for 1 to 2 minutes until it is syrupy in consistency.
Immediately spoon the sauce over bananas and serve.
Serve with waffles, crepes, or ice cream.
