(I am going east) i gain time, but once I fly over the international dateline, it is the next day and I lose a day! My brain will not compute how this works. I do understand that there are 24 time zones, but to totally change to the next day confuses me. I also understand that eventually the day will change, but the way I understand it, it not only changes to the next day, but several hours later into the next day. Help!

Also to help you explain this to me--I am leaving at 9:30 AM on one day, flying into Hawaii for a gas fill up (no layover) and then flying 11 more hours to Guam. I arrive there (Guam time) at 6:20 PM the next day!!

you have it right, just remember that when you fly back you 'regain' the day you lost.

so if you leave Guam at 8 AM on Tuesday, you might land in Hawaii at 6PM on Monday.

If you are flying from Hawaii to Guam you will be traveling West, not East. No wonder you're confused.
