I had this over the holiday. It was delicious! Ingredients were small peices of red pepper, small square potatoes, either rice krispies or ritz crackers, and some kind of delicious cheesy sauce. Anyone have this recipe? My whole family loved it so I cant wait to make it.

O'Brien Potato Casserole

Ingredients:
1 package (24 ounce size) frozen hash browns with onions and peppers, thawed
1 can (10 3/4 ounce size) cream of mushroom soup
1 jar (2 ounce size) diced pimiento, drained
2/3 cup low-fat milk
1/2 cup low-fat sour cream
1/2 teaspoon salt
2 cloves garlic, minced
vegetable cooking spray
1/2 cup soft reduced-calorie whole wheat breadcrumbs, toasted

Directions:

Combine first 7 ingredients, stirring well. Spoon potato mixture into an 8" square baking dish coated with cooking spray. Sprinkle breadcrumbs over top of potato mixture.

Bake at 350F for 45 to 50 minutes or until bubbly.

sounds like it could have been this recipe and modified a bit. with the red pepper. this is really yummy. It doesn't have potato in it but you could probably add diced potatoes too it or hash brown mix. I think i made it that way once too.

Chicken on the Ritz recipe
6 boneless skinless chicken breasts
1 tube Ritz crackers, crushed
1 stick (1/2 cup) butter, melted with 1 teaspoon garlic powder
2 cups Cheddar cheese, shredded

Heat oven to 400 degrees F.

Dip the chicken into the butter, then into the cracker crumbs; place in a 9 x 13-inch baking pan. Sprinkle cheese over all. Place a foil tent over the dish, then bake for 30 minutes. Uncover and bake another 30 minutes.

You could certainly add ½ cup of minced red bellpepper or pimientos to this dish. But they may have used the frozen Potatoes O'Brien that already had onions and peppers in w/ them.

Sinful Potatoes

1 (26 oz.) bag frozen hash brown potatoes
8 oz. shredded cheddar cheese (I like sharp)
1 (10 ¾ oz) can Cream of Celery soup
1 (10 ¾ oz) can Cream of Chicken soup
1 (8 oz.) container sour cream (can use lowfat)
1 medium onion, finely chopped

Combine all ingredients, place in a greased casserole dish. Bake at 350ºF for 45-60 minutes until lightly browned and bubbly.

Sounds like a hashbrown casserole. It probably used a bag of the cubed potatoes/hashbrowns that already have the peppers cut up in them. You can find them in the frozen food section of the store or in the dairy case with the fresh hashbrowns. Sounds delicious. I hope someone has the recipe for you. )

Note: If you don't get the recipe, just try to recreate it from memory using the hashbrowns mentioned above and add your own cheese sauce and crackers.

Cheesy Chicken Curry Casserole:

Prep: 15 min., Cook: 40 min., Stand: 5 min.

2 cups chopped cooked chicken
2 cups broccoli florets, cooked
1 (10 3/4-ounce) can cream of chicken soup
1 (8-ounce) container sour cream
1 cup (4 ounces) shredded Cheddar cheese
3/4 cup milk
1 teaspoon curry powder
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper (optional)
1/2 cup fine, dry breadcrumbs
2 tablespoons butter or margarine, melted

Combine first 9 ingredients and red pepper, if desired. Spoon into a lightly greased 11- x 7-inch baking dish.

Bake at 350° for 30 minutes or until hot and bubbly. Stir together breadcrumbs and melted butter; sprinkle over casserole, and bake 10 more minutes. Let casserole stand 5 minutes before serving.

Note: Freeze unbaked casserole, omitting breadcrumbs and butter, for up to 1 month, if desired. Allow to stand at room temperature 1 hour. Bake at 350° for 1 hour and 30 minutes or until hot and bubbly. Stir together breadcrumbs and melted butter; sprinkle over casserole, and bake 10 more minutes. Let stand 5 minutes before serving.

Yield: Makes 6 servings
