I have a slow cooker, but it isn't big enough to cook potatoes and carrots with my roast. I have done it in the oven before, but not as good. Can I cook it on the stove in a large pot? How do I do this?

Yes you can cook a pot roast - potatoes and carrots and all - right on the stove, but you should cook it at a very low temperature - first bring it to a slow boil, then cover and turn the temp down to simmer. Usually takes a few hours. Check it often so it doesn't stick to the bottom of the pan.

Season with salt,pepper, and any other seasonings you prefer. Sear the roast on all surfaces to retain the juices and place in a large pot on a rack with chopped celery and onion. Cover with water and allow to cook at least half the recommended cooking time before adding the carrots. After the carrots begin to get tender add the potatoes. I generally add more salt and pepper to the potatoes. When the potatoes are done the roast should be ready. I also like to use some of the remaining juice in the pan to mix with McCormicks brown gravy mix to make a gravy.

Here's how I do mine. I use the recipe below. Then I roast the potatoes and carrots separately in the oven. THen if you like, you can dump them into the gravy w/ the meat, or remove the meat, slice it, and then serve the gravy and veggies out of the crockpot. You can also nuke your potatoes/carrots, then dump into the gravy.

Easy Crockpot Beef Roast

1 chuck or rump Beef Roast (sized for your crockpot)
½ Cup of Water
1 Packet of Ranch Dressing Mix
1 Packet of Italian Dressing Mix
1 Packet of Brown Gravy Mix

Put roast in crockpot, pour water around the base. Sprinkle all 3 dry seasoning packets over roast. Cover and cook for 6-7 hours on low. Remove roast to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best).

It makes great tasting gravy too, that tastes like you browned it and simmered it all day on the stove.

yes, brown each side first in a pan with alittle oil, some garlic and basil then simmer it in the pot all day long, it will work like your slow cooker. Put enough water to cover the top of the roast. good luck

ok,they have oven bags [ reynolds ] or you can buy seasoned oven bags just follow directions the roast will melt in your mouth. or you can do this in a large crock pot,but will take all day. happy new year.p.s. i have never cooked a pot roast on stove,it kinda becomes soup or stew then.
