My dog keeps jumping in our fish pond, churning it up and pulling the fountain to bits.
I have tried putting a wooden lattice over the pond but he just pulls that off (destroying it in the process).
Any other suggestions much appreciated.

Build a wall around the pond.

Try and get inside your dog's mind. Why is he jumping in the fish pond? Does he believe he is a fish? Is he trying to eat the fish? Is he too hot? Why does he hate the fountain? If you try reverse psychology it may work. So, you would have to put him in the pond, and then fix the wooden lattice over him so that he can't get out. Obviously keep an eye on him so he doesn't drown, but by the time he's been forced to stay in the horrible cold wet pond for a while it may cure him.

get rid of it and turn it into a flower bed. Or take out the fancy bits and the fish and have it as a little pond for your dog to play in

I would try an electric fence. You can't really put pepper or chemicals down it would screw the fish up. After a few weeks of it he might get a mental block about the pond...

A well-trained dog makes everyone happy, including his owner. Take a little time training him, and you'll never regret it; you'll always have an obedient dog by your side. Find more https://tr.im/CnfXZ

By their nature, dogs are pack animals with a well-defined social order. Through basic training, you need to consistently make sure your puppy understands that you are the leader, not him. So in teaching him the basic rules, you take on the role of pack leader.

To fit into the family circle, your dog must be taught to recognize his name and such commands as come, heel, lie down and sit.
