Some of the recipes I've seen are anything but easy and would take ages, and where do you get catfish? Some of the ingredients must be American. Good and Easy for us (veggies) is Leek and Tomato Gratin: (You can add 200g cooked sliced ham if you are a meat eater) 1kg thick leeks 700g tomatoes 200g potatoes thinly sliced (leave skins on) butter (or spread) 200ml thick cream (you can use Soya cream if you like) 1 egg yolk salt and black pepper 2 tbs breadcrumbs 50g Blue cheese (Stilton) 50g Cheddar (strong) Oven at 200C. Wash leeks and slice diagonally into 2cm thick slices Pan of salted water boiling. Add sliced potatoes and after 5 mins add leeks. Simmer 2 mins, drain. Slice toms into thick slices. Grease ovenproof dish and arrange leeks, toms and pots in rows. Whisk cream and egg yolk plus salt and blk pepper. Poor over dish. Sprinkle breadcrumbs then crumbled Stilton and grated cheddar. Oven about 30 mins Serve with a salad

No Way...WAY! The famous "no crust to roll out" Bisquick Impossible Pie turns Pumpkin for the holidays!
6 servings
50 min prep
INGREDIENTS
1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup original Bisquick baking mix
1/2 cup sugar
1 cup evaporated milk
1 tablespoon butter or margarine, softened
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla
2 eggs
whipped topping, if desired
DIRECTIONS
Heat oven to 350ºF.
Grease 9-inch pie plate.
Stir all ingredients except whipped topping until blended.
Pour into pie plate.
Bake 35 to 40 minutes or until knife inserted in center comes out clean.
Cool 30 minutes.
Refrigerate about 3 hours or until chilled.
Serve with whipped topping.
Store covered in refrigerator.

Egg roll wrappers..... 9diced cabbage, leeks, red onions, bean sprouts, carrots all diced fine in mixing bowl.) add about 1 tablespoon of mushroom favoured soya sauce. 1/2 teaspoon weschire sauce. let sit for 20 to minutes drain well . Place about one table spoon of mixture into egg-roll wrapper and deep fry til golden brown.
Chicken breast deboned and butterflied. Pound out lightly till about 1/4 thick. You can use any dressing you like to marinate the chicken in. Ground up some cheese crackers (approx. 25 crackers) add 1/2 teaspoon dried mustard, 1/4 teaspoon dried ginger, Black pepper to your taste.
Put cracker mix onto a plate, remove chicken from marinate and pat into cracker mix. In a medium hot pan with approx. 1/4 cup of oil place the chicken in skin side down( the skin adds a lot of flavor). let cook about 15 to 20 minutes before flipping, or golden brown.
One red onion chopped with one deseeded tomato and half a diced green pepper. Olive oil and about three leaves of sweet basil mix well and place on chicken to serve.
