Compressing files can be tricky.
Different types of files respond differently to compression schemes. A 1gb jpg file would compress nicely under several schemes while a 1gb .rar file would only compress well under a few "rare" or "select" schemes.
To help you compress all the files and folders on your computer you probably want to look at software from Genie Backup Manager.
http://www.genie-soft.com/
They use the most common compression scheme known as Zip but with a proprietary front end that makes backing up and restoring files a really pain free experience. The plus side of the Zip compression is that if something happens to one file and you don't want to restore everything you can simply extract that one file using any modern archive utility.

Try winrar. Its a good compressing software. However how much it would compress depends upon whether the file is audio, video or a data file. You can also split the file to be compressed into archives, and specify the size of each archive. Download it from www.rarlabs.com

you can use winzip, winrar, 7-zip and other. mostly shareware.
you can use it for free.
how much?
it is difficult question.
because it is depend on the file type. If it is only office file without any picture in it. you can have around 70% compressed.
But if it is DIVX movie, JPEG picture and the similar things. it wont compress too much. Because the file itself has been in the compressed mode.
for further information about data compression refer to this link
