I am looking for edible pork gelatin. WHere can I buy it?

Gelatin is rendered through prolonged boiling of animal bones ligament and tissue. In its purest form it is tasteless, colourless and odourless. Commercial gelatin is available at any grocery or specialty store. In North America, it is most commonly sold in granulated form. It is, however, also available in sheets (this format is preferable for several applications in which the gelatin needs to be dissolved in cold rather than in boiling liquid). Both of these forms of gelatin are often derived from pork.

If you are looking for a gelatin that retains the flavour of the source animal, you will probably need to render it yourself. Pigs feet and knuckles are a particularly good source of gelatin. Cover them in cold water and gently simmer for at least three hours. As the water comes to a boil, skim any impurities that rise to the surface. Pour off any fat, reserving only the "pork broth". Depending on the amount of water that you used initially, you may need to reduce this further by boiling in order that the remaining liquid will "gel" when chilled.

If you have a local butcher that makes pâtés in house, he or she may be able to provide you with some gelatin.

I'm thinking your are going to have to figure out your own concoction of that. Try to blend pork and gelatin and refrigerate. Good luck.
