Just as Tigerhead mentioned, Filipino martial Arts like Kali, Escrima, & Arnis often use knife fighting as part of their training.
one of the leading knife based disciplines is called Sayoc Kali (meaning all blade, all the time) that was developed by Christopher Sayoc Sr.
This discipline includes the sword, stick, tomahawk and whip. The Kerambit may also be used. Sayoc Kali emphasizes the correct and effective use of the blade, including single knife, multiple knives, projectiles, and secondary support to firearms. The empty hand training is called Sayoc Silak.

There are other systems out there but they are based on some form of knife fighting.
There are many cultures that have thier own systems but the most practiced, and likely intact today would be the philipino arts.
