I have made numerous kinds of jello shots, but never used champagne.

A few years ago, Jello offered a fizzy flavor. If I recall correctly they suggested covering the surface with plastic wrap to keep in carbonation. I have included a link to a recipe for Jello shots.

Here is a suggestion from the first website I included below:
"Sweet Tip
Jello shots are always a hit...you can get the small plastic serving cups at Smart & Final or other restaurant suppliers. Also, if you are worried about your guests tasting the alcohol, add a squirt of whipped cream to add sweetness!"

This works out super well actually! They aren't very strong, but oh so yummy. My favorite is peach jello with peach champagne. The champagne is cheap enough that you don't mind using it for jello. =)"
